Breakfast Burrito with Egg and Turkey Sausage

Breakfast Burrito With Egg and Turkey Sausages?
(Yield 4 burritos)

Ingredients:

  • 6 oz. italian style turkey sausages
  • 4 large eggs, beaten
  • 4 flour tortillas (Tortilla Land)
  • 4 tbsp. shredded, plant-based vegan cheese (non-soy and dairy, gluten free)
  • 2/3 cup yellow onion
  • 4 tsp. I Can't Believe It’s Not Butter or vegan butter

Preparations:

  1. Place 2 tsp. I Can't Believe It’s Not Butter on the skillet, stir fry yellow onion and 6oz. italian style turkey sausage until dark brown for 4 minutes. Remove and set aside. 
  2. Heat 2 tsp. I Can't Believe It’s Not Butter on the skillet, add eggs and cook until done. Remove and set aside.
  3. Heat a skillet over low heat and place tortilla in pan and cook for 30 seconds each side until slightly golden and tortilla begins to puff. 
  4. Assemble Burrito: Place 1 tortilla on the plate, fill with 1 tbsp. scrambled eggs, Italian sausages mixture, 1 tbsp. plant-based vegan cheese. Roll up, folding the bottom edge before rolling to keep the filling from falling out.
