Cauliflower Fried Rice

(servings: 2)

Ingredients:

  • 1 medium onion (chopped)
  • 1 tbsp. olive oil
  • 2 cups cauliflower rice
  • 2 eggs, beaten 
  • 1 cup shredded cabbage 
  • 2 medium carrots (diced) 
  • 2 garlic cloves (minced)
  • 1 tbsp. fresh ginger, grated 
  • 1 tbsp. brown sugar
  • 1 tbsp. rice vinegar
  • 1 tbsp. low sodium soy sauce or coconut aminos 
  • 1/4 teaspoon pepper

Preparations:

  1. Heat a large pan over medium heat and add oil.
  2. Add garlic, onion, peas, carrots, cabbage and saute until tender. Move to plate.
  3. Meanwhile, in a small bowl mix together soy sauce, rice vinegar, brown sugar, ginger, black pepper.
  4. Using same pan as you used for the veggies, cook the beaten eggs, scrambling. 
  5. Stir in cauliflower rice and soy sauce mixture, mixing well.
